| The farm which has been in the family since 1890 has been producing coffee since 1896. Located 3 miles from Minas Gerais state line it has characteristics from the mountainous areas of Mogiana and from Sul de Minas. From a total area of 417 hectares, Fazenda Cachoeira has a coffee plantation area of 165 hectares. The altitude is between 1100m and 1250m and the precipitation is between 1800 and 2000mm per year with an average temperature of 19C. The farm produces "Bourbon" coffees, which are famous for their exceptional quality. In the region there are bourbon trees 107 years old. |

| The beans are harvested on a sheet. After harvesting the beans are very carefully processed by the "natural pulped" process so as not to lose any of the body and cup qualities for which the region is known. Everything is done manually since the topography of the farm does not allow any kind of mechanization. We believe the Estate is essentially an organic producer, however we do not have any official documentation. If you wish you may contact the Estate directly to ascertain the current status. |
Cleaning Coffee  |
| Social and environmental sustainability is considered very important here. The owner has a program of planting native species to keep a better ecological balance. The farm has a school, a club and an official size soccer field for the employees' benefit. There are 47 houses, all with modern facilities. The waste water is treated to avoid polluting the stream that runs across the farm. The farm has a small hydroelectric plant and only buys energy during the harvest. |

Tasting Notes
|
| This coffee could be described as a classic Brazilian (and then some!).
We roast this coffee to a medium (plus a very little bit more) roast. This gives a cup with a good, full, clean taste, and a very slight "edge" which makes for a lovely coffee.
A great coffee black but if you must add milk and sugar then it will come to no harm.
